Ingredients

  • 2 Tbsp of vegetable oil
  • 1 pint heirloom tomatoes
  • ½ red onion-sliced
  • 1 lb beef tenderloin-sliced
  • 2 cups beef stock
  • 2 tbsp tomato paste
  • 1 cup Hiland Dairy Lactose Free Cottage Cheese – split
  • 1 lb penne pasta-cooked
  • salt & pepper

Directions

  • Heat a medium sized nonstick skillet over medium heat. Add 2 tablespoons of oil.
  • Add tomatoes, onions and cook until soft.
  • Add the beef and cook until browned, stirring constantly.
  • Stir in beef stock and tomato paste. Once it comes to a boil add half the cottage cheese.
  • Stir in pasta and bring back to a boil. Season with salt and pepper to taste.
  • Turn off the heat and add in the other half of the cottage cheese. Make sure you season to taste. Serve hot.
