We’ve all heard that breakfast is the most important meal of the day. In fact, we told you in an article a while back that breakfast can actually give students a leg up on academics. The problem is, breakfast isn’t always on a kid’s priority list during the morning hustle and bustle of getting ready for school. Well this Microwave Coffee Cup Scramble recipe is quick, easy and actually fun! It only takes a couple of minutes to make and the kid’s tell us that watching the scramble ‘puff up’ in the microwave is ‘so cool!’
Coat a 12-ounce microwave-safe coffee mug with cooking spray. Add eggs and 2 tablespoons milk and beat until blended. Microwave on high for 45 seconds and then stir. Microwave until eggs are almost set, 30 to 45 seconds longer. Top with Cheddar cheese. Season with salt and pepper. Tip: Serve with an 8 oz. glass of Hiland Dairy Milk for an extra protein boost!
