Ingredients

CAKE

1 1⁄2 cups all purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1⁄2 teaspoon fine salt
3⁄4 cup Hiland Dairy Cottage Cheese
1⁄2 cup vegetable oil
2 eggs, room temperature
2 tablespoons orange zest

STREUSEL TOPPING

1⁄3 cup all purpose flour
3 teaspoons granulated sugar
2 tablespoons Hiland Dairy salted butter, melted and cooled to room temperature pinch fine salt

ORANGE JUICE ICING

1 cup powdered sugar 2 T orange juice
1⁄2 teaspoon orange zest
1 tablespoon corn syrup pinch fine salt

Directions

  • Preheat the oven to 350°. Prepare a 12×10 metal baking dish with nonstick cooking spray.
  • In a medium medium mixing bowl, combine the first 4 “CAKE” ingredients.
  • Add the Hiland Dairy cottage cheese to the bowl of a blender or food processor and pulse for 1 minute to whip. Once the cottage cheese is whipped to a smooth consistency, add oil and eggs and pulse to combine.
  • Pour the whipped cottage cheese mixture over the dry cake ingredients and fold in the orange zest. Stir gently to combine, do not over mix. Pour the cake batter into the prepared baking dish.
  • Prepare streusel topping by combining all 4 ingredients in a small mixing bowl. Using a fork evenly combine to form a crumbly texture. Sprinkle the streusel topping over the cake and place into the preheated oven.
  • Bake 30-35 minutes or until the center of the cake is set and a toothpick comes out clean (an instant read thermometer registers 195°).
  • While the breakfast cake is baking, mixture together the Orange Juice Icing. Once the cake is finished baking, drizzle with the icing and serve warm.
