Spicy Cilantro Lime High Protein Dressing

This creamy cottage cheese based salad dressing is packed with flavor and protein. Cilantro, pickled jalapeños and a handful of fresh vegetables makes this creamy dressing the perfect topping for salads and a crave-worthy dip for chips and veggie sticks. Add a little chili powder or cumin for an extra flavor kick.

Ingredients

  • 16 ounces Hiland Cottage Cheese (small curd, low-fat or whole milk)
  • 3 tablespoons pickled jalapeños (undrained mild or hot)
  • ½ cup packed fresh cilantro
  • 2 green onions
  • 4 cherry-sized tomatoes
  • 1 small lime, juiced and zested
  • 2-3 tablespoons water (or for desired consistency)
  • salt + pepper to taste

Directions

  • Place the cottage cheese and all ingredients (except water) into the bowl of a food processor and blend to smooth, about 2 minutes.
  • Store back in the cottage cheese container and refrigerate until ready to use. Lasts 2 weeks refrigerated.
  • Serve with salad or vegetable sticks.
