Ingredients

  • 1 lb tiger shrimp – cooked
  • 1 red bell pepper – diced
  • 1 red onion – diced
  • 2 dashes hot sauce
  • 1 tbsp Creole mustard
  • 2 tbsp Mayo
  • 1 tbsp Hiland Dairy Light Sour Cream
  • 2 tbsp Cajun seasoning
  • 1 tbsp lemon juice
  • 2 cups panko breadcrumbs
  • 2 tbsp Hiland Dairy Unsalted Butter

Directions

  • In a large bowl, combine chopped cooked shrimp, onions, and red peppers. Then add hot sauce, mustard, sour cream, mayo, cajun seasoning, and lemon juice. Mix in panko breadcrumbs until the mixture is compact. I mean when you push down on the entire batch that it binds together.
  • Make the entire batch into 4 oz. patties, or the desired size for your event. Place each patty to the side until all patties are made.
  • Heat the butter on medium in a skillet on the stove top. Place in all the patties gently. Sauté until golden brown on bottom and then flip once until uniform.
  • Plate on a bed of arugula and spinach. Serve with Cajun sour cream on the side. Enjoy!
