Ingredients

  • 2 cups Hiland Dairy Low Fat Cottage Cheese
  • 3 Eggs – beaten well and seasoned
  • 2 Tbsp Red Onion – diced
  • ¼ cup Grape Tomatoes – halved
  • ¼ cup Colby Jack Cheese – shredded
  • 2 Tbsp Oil

Directions

  • Heat a medium sized nonstick skillet over medium heat. Add 2 tablespoons of oil.
  • Add tomatoes, onions and cook until soft.
  • Add the beef and cook until browned, stirring constantly.
  • Stir in beef stock and tomato paste. Once it comes to a boil add half the cottage cheese.
  • Stir in pasta and bring back to a boil. Season with salt and pepper to taste.
  • Turn off the heat and add in the other half of the cottage cheese. Make sure you season to taste.
