Ingredients
- 2 cups Hiland Dairy Low Fat Cottage Cheese
- 3 Eggs – beaten well and seasoned
- 2 Tbsp Red Onion – diced
- ¼ cup Grape Tomatoes – halved
- ¼ cup Colby Jack Cheese – shredded
- 2 Tbsp Oil
Directions
- Heat a medium sized nonstick skillet over medium heat. Add 2 tablespoons of oil.
- Add tomatoes, onions and cook until soft.
- Add the beef and cook until browned, stirring constantly.
- Stir in beef stock and tomato paste. Once it comes to a boil add half the cottage cheese.
- Stir in pasta and bring back to a boil. Season with salt and pepper to taste.
- Turn off the heat and add in the other half of the cottage cheese. Make sure you season to taste.
