Pistachio and Dried Cherry Holiday Cheese Log

The Holidays offer the opportunity to serve a little something special to friends and family and this recipe is certain to accomplish that goal! Simply combine the cheese log ingredients, roll in chopped cherries, herbs and pistachios, wrap and refrigerate until ready to serve. Then slice and serve with crackers. This cheese log is the perfect combination of sweet and salty with little gems of tart dried cherries, Hiland creamy cheese, herbs and crunchy salty pistachios.

Ingredients

  • 8 ounces Hiland cream cheese, softened to room temperature
  • 3 ounces Hiland grated Colby Jack cheese
  • 4 ounces dried cherries, divided*
  • 2 tablespoons Hiland heavy whipping cream
  • ½ teaspoon kosher salt
  • ¼ teaspoon cracked black pepper
  • 4 tablespoons chopped Italian parsley, divided
  • 1 teaspoon fresh rosemary finely chopped**
  • ** If you can’t find fresh rosemary use ¼ teaspoon dried rosemary.
  • 4 ounces roasted, salted pistachios (shell removed), chopped

Directions

  • In a medium mixing bowl, combine all ingredients EXCEPT half of the cherries, parsley and the chopped pistachios. Using a hand mixer or large spoon, whisk to smooth.
  • Place the remaining cherries, parsley and pistachios in an even layer (10”x8”) on an 18”x20” (approximate) sheet of parchment paper or plastic wrap. Roll the cheese mixture, forming into a log while coating the exterior with cherries, parsley and pistachios.
  • Divide the cheese log into 2 equal portions, wrap each portion with plastic wrap or parchment paper and refrigerate for 1-4 hours or until ready to serve.
  • Before using the cherries, rehydrate them by placing them in a heat proof bowl and covering with ½ cup boiling water. Let the cherries sit in the water for 5 minutes and then drain off the excess water, chop and divide into 2 equal portions.
  • Serve with crackers and veggie sticks.
  • Makes 2 (5” cheese logs). Can last refrigerated up to 10 days.
