Mini Whipped Scone Cookies with Chocolate Milk Icing

These buttery little cookies have such a lovely, light but creamy texture thanks to a few key ingredients and a couple of simple cookie-making techniques. Start by whipping Hiland salted butter for 3 minutes then slowly add in the sugar and flour. Don’t forget the milk! Milk doesn’t just go with these cookies, Hiland Dairy Chocolate milk is in the cookies and icing! Ingredients

Scone Cookie Ingredients

  • 2 sticks Hiland Dairy Salted Butter, room temperature
  • 1⁄2 cup powdered sugar
  • 3 tablespoons Hiland Dairy Chocolate Milk (or your favorite flavor of Hiland Dairy milk)
  • 1 1⁄2 cups all purpose flour

Chocolate Milk Icing Ingredients

  • 2 tablespoons Hiland Dairy Chocolate Milk (or your favorite flavor of Hiland Dairy milk)
  • 3⁄4 cup powdered sugar
  • A pinch of kosher salt
  • 2 teaspoons light corn syrup
  • Chocolate sprinkles, optional

Directions

  • Preheat the oven to 350°. Line a baking sheet with parchment paper and set aside. In the bowl of a stand mixer, using the whisk attachment, whip butter on high-speed for 3 minutes. Add powdered sugar and continue mixing on low-speed (scraping the sides) until completely incorporated.
  • Next, switch out the mixer attachments, using the paddle attachment for the remainder of the recipe. Add Hiland Dairy Chocolate milk and mix to combine. Last, incrementally add flour in thirds scraping the bowl between additions.
  • Once the flour is incorporated, use a 2 tablespoon scoop to scoop cookie dough into balls, placing them on the parchment-lined baking sheet.
  • Chill for 15 minutes and then bake for 15 minutes.
  • Once baked, allow cookies to cool completely before icing.
  • To prepare the Chocolate Milk Icing, combine all of the icing ingredients in a small mixing bowl. Whisk until smooth.
  • efrigerate until the cookies are cooled and ready for icing.
