Ingredients

  • 5 bacon strips, diced
  • 1 red onion, Julienne
  • 1 green bell pepper, Julienne
  • 1 package smoked sausage, 1/2 inch thick slices
  • 1 tbsp Shallot, minced
  • 1 tbsp Garlic, minced
  • 1 cup White Cooking wine
  • ½ lb Penna Pasta, cooked and cooled
  • 3 slices Vegan Provolone, plant based in produce section
  • 2 tbsp Hiland Dairy Lactose Free Cottage Cheese
  • 1 cup Hiland Dairy Lactose Free 1% Milk
  • Salt and Pepper

Directions

  • Cook the penne pasta to the manufacturer suggestion. Once the pasta is al dente: with a little bite in: shock the pasta in a bath of ice water. Make sure you move it around so that the cooking of the pasta stops and the water is bitter cold.
  • In a medium size non-stick skillet, cook the bacon until it becomes crispy. Then add the onions, bell peppers and sausage. Cook until the sausage is browned and the Peppers and onions have softened.
  • Add shallot and garlic and cook for one minute. Deglaze the pan with wine and reduce the wine by half. Add the milk, cottage cheese, and pasta. Once the entire dish is heated really well, add the provolone. Once the provolone is melted, the dish is ready to season with salt and pepper to taste.
