Ingredients
- 1/4 cup (1/2 stick) Hiland Butter
- 1 cup Water
- 2 cups Shredded Potatoes
- 2 tablespoons Onion, chopped
- 1 tablespoon Flour
- 4 cups Hiland 2% Milk
- 1 package (3 1/2 oz.) Smoked Sliced Beef
- 1 cup (8 3/4 oz. can) Whole Kernel Corn
- 1/4 teaspoon Celery Seed (optional)
- 1 cup Hiland Sour Cream
- Salt and pepper
- Chopped Parsley (optional)
Directions
- In saucepan melt butter. Add water, potatoes and onion. Cover, bring to a boil.
- Turn to simmer and cook until potatoes are done, about 20 minutes.
- Stir in flour and cook 1 minute.
- Gradually add Hiland Milk, stirring constantly.
- Stir in beef which has been cut into small pieces, undrained corn and celery seed.
- Gently blend in Hiland sour cream.
- Heat to serving temperature. Add salt and pepper to taste.
- Serve garnished with a dollop of sour cream and parsley, if desired.
