Eggnog Waffles with Cinnamon Whipped Cream

Ingredients

Eggnog Waffles

  • 3 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons baking powder
  • 2 teaspoons kosher salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 4 eggs
  • 3 cups Hiland Dairy eggnog
  • 10 tablespoons Hiland Dairy butter (melted)

Cinnamon Whipped Cream

  • 1 cup Hiland Dairy heavy cream
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon pure vanilla extract

Directions

  • In a large bowl, mix together the flour, baking powder, sugar, salt, cinnamon and nutmeg. Set aside.
  • In another bowl, whisk together the eggs, Hiland Dairy Eggnog and Hiland melted butter. Pour the eggnog mixture into the flour mixture and mix together until just combined.
  • To make waffles, spray the waffle maker with nonstick spray and pour about 1/4 to 1/3 cup batter into the waffle maker. Cook each side 2-3 minutes and then remove. Repeat with remaining batter.
  • In a large bowl, combine the Hiland Dairy heavy cream, sugar, cinnamon and vanilla. Using a hand mixer or stand mixer and whip until soft peaks form.
  • Top waffles with whipped cream (and butter and syrup if you’re feeling fancy) and enjoy!
