Eggnog Dessert Bars
Ingredients
- 12 oz bag gingersnap cookies
- 6 tablespoons Hiland Dairy Butter melted
- 1/4 cup brown sugar
- 1/4 teaspoon salt
- 8 oz Hiland Dairy Cream Cheese softened
- 1/2 cup Hiland Dairy Old Fashioned Egg Nog
- 1 tablespoon flour
- 1/2 cup sugar
- 1 egg separated
- 1 teaspoon rum extract
- 1/2 teaspoon nutmeg
Directions
- In a blender, grind coolies into fine crumbs. Add the brown sugar, salt, and butter and combine well.
- Press prepared crumbs into the bottom of a 9×13-inch pan. Bake at 350 degrees for 10 minutes.
- Meanwhile, beat cream cheese, eggnog, flour, and sugar until smooth.
- Add the egg white and mix well. Add the egg yolk and mix well.
- Add the extract and nutmeg and blend to incorporate.
- Pour the eggnog mixture over the baked crust and return to the oven.
- Bake 25 minutes or until the center is set.
- Allow to cool completely. Cut into squares and serve.
- Diva’s Tip: Sprinkle a little cinnamon over the top of the bars before cutting into squares for an extra layer of yummy flavor!
