Ingredients
- 2 lbs Yukon Gold potatoes, peeled and cut into chunks
- ½ cup Hiland Dairy Sour Cream
- 4 tbsp butter
- ¼–½ cup warm milk or cream (as needed)
- 1 tsp kosher salt (plus more to taste)
- Black pepper to taste
- ¼ cup chopped fresh chives
- Optional: a squeeze of lemon to brighten
Directions
- Boil potatoes – Place potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 12–15 minutes.
- Mash with richness – Drain potatoes and return to the pot. Add butter and sour cream, then mash until smooth and creamy.
- Adjust texture – Add warm milk or cream a little at a time until the potatoes reach your preferred consistency.
- Season – Stir in salt, pepper, and fresh chives. Taste and adjust seasoning. Add a squeeze of lemon if you want a light brightness.
