Ingredients

  • 1 cup Hiland Light Sour Cream
  • 1/4 cup mayonnaise
  • 2 chipotle peppers in adobo sauce, finely diced
  • Juice of 1/2 Lime
  • 1 teaspoon ground oregano
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 3 tablespoons olive oil
  • 1 bell pepper, seeds removed and diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup heavy cream milk
  • Cilantro, wash and chopped

Directions

  • Stir together Hiland sour cream, mayonnaise, chipotle peppers, lime juice, oregano, salt, and pepper until well combined.
  • Taste, add additional salt and pepper if desired.
  • Set aside.
  • Heat olive oil over medium heat in a large skillet. Add diced bell pepper and onion, sauté until light and translucent, about 3 minutes. Stir in garlic, sauté an additional minute.
  • Add the shrimp and sauté for 3-4 minutes, or until the shrimp is cooked through and opaque.
  • Reduce heat, stir in chipotle cream sauce, and heavy cream, stirring to coat shrimp and warm through.
  • Serve warm garnished with cilantro.
