Ingredients
- 1 cup Hiland Light Sour Cream
- 1/4 cup mayonnaise
- 2 chipotle peppers in adobo sauce, finely diced
- Juice of 1/2 Lime
- 1 teaspoon ground oregano
- 2 teaspoons salt
- 1 teaspoon pepper
- 3 tablespoons olive oil
- 1 bell pepper, seeds removed and diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound shrimp, peeled and deveined
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup heavy cream milk
- Cilantro, wash and chopped
Directions
- Stir together Hiland sour cream, mayonnaise, chipotle peppers, lime juice, oregano, salt, and pepper until well combined.
- Taste, add additional salt and pepper if desired.
- Set aside.
- Heat olive oil over medium heat in a large skillet. Add diced bell pepper and onion, sauté until light and translucent, about 3 minutes. Stir in garlic, sauté an additional minute.
- Add the shrimp and sauté for 3-4 minutes, or until the shrimp is cooked through and opaque.
- Reduce heat, stir in chipotle cream sauce, and heavy cream, stirring to coat shrimp and warm through.
- Serve warm garnished with cilantro.
