  • 1/2 lb ground chicken sausage
  • 8 large eggs
  • 1/2 cup Hiland Dairy Small Curd Cottage Cheese
  • 1/2 cup grated parmesan cheese
  • 1 Cup spinach
  • ¾ teaspoon salt
  • fresh ground pepper
  • Cooking spray


  • Preheat oven to 350°.
  • Lightly spray a 10 inch oven safe skillet with cooking spray.
  • In a medium bowl whisk eggs cottage cheese parmesan cheese salt and pepper. Set aside.
  • Add sausage to a skillet, breaking it up into small pieces with a wooden spoon over medium heat and cook until browned. Add the spinach to wilt.
  • Once the meat and spinach is ready add the eggs right to the skillet and turn the burner off.
  • Bake in the oven until the top is set for about 16 to 18 minutes.
  • With a spatula carefully slot frittata out of the skillet onto a cutting board and cut into wedges.
