Ingredients
- 1/2 lb ground chicken sausage
- 8 large eggs
- 1/2 cup Hiland Dairy Small Curd Cottage Cheese
- 1/2 cup grated parmesan cheese
- 1 Cup spinach
- ¾ teaspoon salt
- fresh ground pepper
- Cooking spray
Directions
- Preheat oven to 350°.
- Lightly spray a 10 inch oven safe skillet with cooking spray.
- In a medium bowl whisk eggs cottage cheese parmesan cheese salt and pepper. Set aside.
- Add sausage to a skillet, breaking it up into small pieces with a wooden spoon over medium heat and cook until browned. Add the spinach to wilt.
- Once the meat and spinach is ready add the eggs right to the skillet and turn the burner off.
- Bake in the oven until the top is set for about 16 to 18 minutes.
- With a spatula carefully slot frittata out of the skillet onto a cutting board and cut into wedges.
