3 Ingredient Cottage Cheese Pancakes
- 1/2 cup Hiland Dairy Lowfat Cottage Cheese
- 1/2 cup oatmeal or steel cut oats
- 3 eggs
- 1-2 tablespoons oil (for cooking the pancakes)
- Mix cottage cheese, oatmeal, and eggs in blender until smooth.
- Heat griddle over medium heat and add oil.
- Pour or scoop approximately 1/4 cup batter per pancake onto the griddle.
- Cook 2-4 minutes per side or until fully cooked and slightly browned on both sides.
- Serve with your choice of toppings.
