Whenever I think of a classic indulgent appetizer, I immediately think of spinach dip. It’s a classic for a reason. A simple, creamy mix paired with a chip, bread, or veggies is always a hit. But what if we took it up a few notches with some additions of dairy and made the classic appetizer an out-of-this-world dish people won’t soon forget.

This dip is made with butter, garlic, shrimp, spinach, sour cream, AND cream cheese then topped with tons of cheese and baked in the oven. The dip is full of buttery garlic flavor then paired with the tangy and rich mix of Hiland Cream Cheese and Sour Cream. A perfect dairy pair to make the ultimate creamy appetizer. Creamy Shrimp and Spinach Dip

Creamy Shrimp and Spinach Dip

Ingredients:

  • 2 tablespoons Hiland Dairy Butter
  • Olive oil
  • 1/2 onion, chopped
  • 2 tablespoons minced garlic
  • 10 ounces raw shrimp, cut into pieces
  • 1/4 teaspoon kosher salt
  • 16 ounces frozen chopped spinach, thawed and drained
  • 8 ounces Hiland Dairy Cream Cheese, softened
  • 1 cup Hiland Dairy Sour Cream
  • 1/2 cup shredded Parmesan cheese
  • 2 cups Hiland Dairy Shredded Mozzarella Cheese, divided

Directions:

  • Preheat the oven to 375 degrees. In a cast iron or oven safe skillet, add the butter and a drizzle of olive oil on medium/high heat.
  • Once butter is melted, add the chopped onions and cook for 2-3 minutes until soft. Add the garlic and stir together and cook for another minute.
  • Add the chopped shrimp and salt to the hot pan and cook until shrimp are pink, about 5 minutes.
  • Once shrimp are cooked, turn the heat to low/medium and add the cream cheese, sour cream, and spinach. Stir together until combined and the cream cheese fully melts.
  • Add the Parmesan cheese and 1 1/2 cups of the shredded mozzarella cheese. Stir all together until the cheese is melted through.
  • Sprinkle the remaining 1/2 cup shredded mozzarella cheese over the top and move the entire skillet to the oven.
  • Cook for about 15 minutes until the cheese on top is melted and starting to get slightly brown.
  • Remove from the oven and serve with your favorite cracker, chip, bread, or veggie!
  • To reheat any leftovers, place the skillet on the stove on low/medium heat until warmed through.
