Lately with everything going, spending time with family is so important. That’s why I have been doing a lot more baking with my kids. It’s great to see how their faces light up when they know they have helped make something. These kind of memories I want more of!

As requested by my kids, cupcakes were one of the first things we set out to make at home together. While cupcakes are great, the frosting is what makes them 1000 times better, am I right?!

This frosting is light and delicious without being overly sweet. Perfect for piping it onto cakes or cupcakes. 

Let’s face it though, this frosting is so good you might not even need the cupcakes.

WHAT YOU NEED TO MAKE WHIPPED CREAM FROSTING:

  • 8 oz cream cheese
  • 1 cup powdered sugar (spooned and leveled)
  • 2 tsp vanilla extract
  • 2 3/4 cup Hiland heavy whipping cream

HOW TO MAKE THIS FROSTING

In a large mixing bowl, combine the cream cheese and powdered sugar. Whisk this together for at least 3 to 4 minutes. Possibly longer depending on how cold your cream cheese is.

Next you will add in vanilla extract. Whisk briefly just so it’s distributed evenly.

Then, pour in the Hiland heavy whipping cream. I like to use Hiland because they have no preservatives, and the flavor is just so tasty!

Start off on the slow setting and whisk. Gradually turn your speed up until you are on high. Let it whisk for a total of about 3 to 4 minutes. You want the frosting to have stiff peaks when you lift the whisk out of the bowl. That’s when you know it’s ready. 

Then you can scoop it into a piping bag and start decorating or if you are like me and my kids you grab a spoon to sample the finished product. YUM!

Whipped Cream Frosting

  • 2 3/4 cup Hiland heavy whipping cream

Instructions

  • In a large mixing bowl, combine the cream cheese and powdered sugar. Whisk this together for at least 3 to 4 minutes.
  • Next you will add in vanilla extract, then whisk.
  • Then, pour in the Hiland heavy whipping cream. Whisk on slow setting and gradually turn your speed on high. Let it whisk for 3 minutes or until stiff peaks form.

Notes

This frosting should be stored in the refrigerator because of the dairy in it for up to 24 hours before the texture might get soft.
Makes enough to pipe 24 cupcakes or fill and frost a double-layer 9-inch cake.
