Remember when I told you to repurpose your sour cream and cottage cheese containers for Thanksgiving leftovers like turkey, stuffing and mashed potatoes? Why just heat them up when you can turn those leftovers into bite-sized deliciousness!
Preheat oven to 350°F. Grab one egg and your Thanksgiving leftovers out of the fridge.
Grab a muffin pan and coat each cup with cooking spray. Beat one egg and lightly mix it with your stuffing. Spoon stuffing into each muffin cup, slightly working up the sides.
Add leftover turkey or chicken (cubed), Hiland Dairy Shredded Cheddar Cheese and top with mashed potatoes.
Bake for 10 minutes.
Voilà! You have a muffin meal in minutes.
If you have leftover corn or green beans, toss them in too. Round off your mini with warmed gravy. Yum!
