Orange juice really is one of nature’s greatest treats. Sweet, cool and chock-full of vitamin C and other essential nutrients, it’s no wonder orange juice has been on America’s breakfast table for generations.

Place cubed pork in large Dutch oven or heavy pot (do not use unlined cast-iron — it can react with the citrus and affect the taste). Add orange juice, lime juice, garlic, cumin, salt and enough stock to cover meat.
Bring to a boil and reduce heat to a simmer. Cook uncovered for two hours without touching the meat.
Increase heat to high and cook for approximately 45 minutes, stirring occasionally and turning meat, or until all the liquid has evaporated, leaving only the pork fat (you will hear it begin to sizzle). Let the pork cook in its fat long enough to brown at the edges, turning cubes as needed.
Remove from heat. Using two forks, shred the meat — it should be ready to fall apart. Adjust seasonings to taste and serve on warmed tortillas with your favorite toppings.
