Key Lime Pie Mousse Parfait

A deconstructed and easy recipe to have that classic flavor while still getting the buttery sweet crunch from the crust. Smooth and creamy mousse made from my favorite quality ingredients from Hiland Dairy mixed with the sweet crumble crunch throughout. Great recipe sure to be a hit!

Key Lime Pie Mousse Parfait

Ingredients

Crumble

  • cup graham cracker crumbs
  • ¾ cup old fashioned oats
  • cup brown sugar
  • 3 Tablespoons flour
  • 6 Tablespoons Hiland Dairy Butter cold

Key Lime Mousse

  • 1 ½ cups Hiland Dairy Heavy Cream
  • ¼ cup powdered sugar
  • 1 cup sweetened condensed milk
  • cup Key Lime Juice fresh or bottle
  • 1 teaspoon pure vanilla extract
  • Green food coloring optional
  • Key limes for zest or garnish

Instructions

  • Crumble- Preheat the oven to 350 degrees. Line a small sheet pan with parchment or nonstick spray.
  • In a medium bowl, combine the graham cracker crumbs, oats, brown sugar and flour. Add the cubes of HIland butter and then mix together using your hands (it’s easiest) until you get a crumbly consistency. Spread onto the sheet pan evenly and then bake for 20 minutes. Stir around halfway through baking. Remove from the oven and let cool.
  • Mousse- Using a stand mixer or hand mixer with a large bowl, add the Hiland heavy cream and powdered sugar. Mix on medium speed until mixture thickens and you get stiff peaks formed. Remove about 1 cup of the whipped cream mix and set aside to use for topping.
  • In a separate bowl, add the condensed milk, key lime juice, vanilla and green food coloring (optional). Mix together until combined.
  • Fold the whipped cream by hand into the key lime mixture until all combined and smooth.
  • Assemble- In a jar, sprinkle the crumble mix on the bottom generously then top with a heaping dollop of the key lime mousse. Repeat with the crumble and then more mousse. Top with a spoonful of whipped cream then more crumble over top. If you are feeling fancy, add some key lime zest and wedge for garnish. Serve and enjoy!
  • Notes: store the mousse in an airtight container in the fridge. Store the crumble separately in an airtight container on the counter.

Step By Step Instructions

Prepare for baking: Preheat the oven to 350F. Line a small baking sheet with parchment or spray it with a light layer of nonstick cooking spray.

Make the crumble: Mix together graham cracker crumbs, oats, brown sugar and flour. Then add the cubes of Hiland butter and mix together by hand until the mixture is crumbly. Spread out evenly on the baking sheet and bake for 20 minutes. Stirring halfway through. Set aside to cool when done.

Make the Key Lime Mousse: First up is the whipped cream, add the HIland heavy cream and powdered sugar in a stand mixer bowl or large bowl with a hand mixer. Mix together until you reach stiff peaks. Set aside about 1 cup of the whipped cream for topping the parfaits.

In a separate large bowl, add the condensed milk, key lime juice, vanilla extract and green food coloring (if using). Mix together until smooth. 

Fold the whipped cream into the key lime mixture by hand until all combined.

Assemble: In a jar or parfait glass, sprinkle the crumble on the bottom generously. Then top with a few dollops of the key lime mousse. Repeat with more crumble and another dollop of the mousse. Top the whole thing with a spoonful of whipped cream and then sprinkle a little more rumble over that. Add key lime zest or a wedge for garnish if you’re feeling fancy.  Enjoy!

Storing

If waiting to serve the parfaits, then keep the mousse and the whipped cream in airtight containers in the fridge until serving.

Store the crumble in an airtight container on the counter or pantry.

You can assemble these ahead of time a few hours prior to needing them and then place in the fridge until ready to serve.
