Eggnog Muffins with Eggnog Glaze

Instructions

  • Preheat the oven to 375 degrees and line a muffin tin with paper liners. (makes 12 muffins).
  • In a medium bowl, add the 2 ¼ cup flour, 1 cup sugar, 2 teaspoons baking powder, 1 teaspoon nutmeg and whisk together. Set aside.
  • In a large bowl, add the 2 eggs, 1 cup Hiland Eggnog, 1 stick melted butter and 1 teaspoon vanilla. Whisk together until combined.
  • Add the flour mixture to the eggnog mixture and mix by hand just until combined and you cannot see any more flour streaks.
  • Scoop the muffin batter into the liners about ¾ full.
  • Streusel- In a small bowl, combine the ⅓ cup flour, ⅓ cup sugar and 1 teaspoon nutmeg. Add the 2 tablespoons of cold butter and use your hands to mix the butter into the flour mixture. It needs to end up being the consistency of gravel.
  • Generously sprinkle the streusel mixture evenly over all the muffins. Bake at 375 degrees for about 20 minutes or until a toothpick inserted in the center comes out clean.
  • While the muffins are baking, make the Eggnog glaze. In a small bowl, add the 1 cup powdered sugar, 1 teaspoon nutmeg, 1 teaspoon vanilla and ¼ cup Hiland Eggnog. Whisk together until smooth, set aside.
  • Remove the muffins from the oven and let cool for about 15 minutes. Drizzle the Eggnog glaze over each muffin. Dig in and enjoy!
