Eggnog Dessert Bars
The holiday season brings joy, happiness, and…eggnog! As soon as I see cartons of Hiland Dairy Old Fashioned Egg Nog at my local grocery store, I make a beeline for the tasty drink. In fact, I usually start baking my favorite Eggnog Dessert Bars the same day. This is a treat that doesn’t last long around our house!
Eggnog Dessert Bars
12 oz bag gingersnap cookies 6 tbsp Hiland Dairy Butter melted 1/4 cup brown sugar 1/4 tsp salt 8 oz Hiland Dairy Cream Cheese softened 1/2 cup Hiland Dairy Old Fashioned Egg Nog 1 tbsp flour 1/2 cup sugar 1 egg separated 1 tsp rum extract 1/2 tsp nutmeg
In a blender, grind coolies into fine crumbs. Add the brown sugar, salt, and butter and combine well.
Press prepared crumbs into the bottom of a 9×13-inch pan. Bake at 350 degrees for 10 minutes.
Meanwhile, beat cream cheese, eggnog, flour, and sugar until smooth.
Add the egg white and mix well. Add the egg yolk and mix well.
Add the extract and nutmeg and blend to incorporate.
Pour the eggnog mixture over the baked crust and return to the oven.
Bake 25 minutes or until the center is set.
Allow to cool completely. Cut into squares and serve.
Diva’s Tip: Sprinkle a little cinnamon over the top of the bars before cutting into squares for an extra layer of yummy flavor!
