Cream Cheese Snowball Cookies

Ingredients

  • 1 8oz package Hiland Dairy Cream Cheese room temperature
  • 1/2 cup Hiland Dairy Butter room temperature
  • 1 1/4 cup granulated sugar
  • 2 eggs
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • Powdered sugar for dusting cookies

Instructions

  • Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper or spray with nonstick spray.
  • In a large bowl or the bowl of a stand mixer, cream together the Hiland Dairy Cream Cheese and Butter on medium high speed for a couple minutes.
  • Add the sugar and mix again for another minute. Scrape the sides of the bowl down and then add the eggs and vanilla. Mix again until just combined.
  • In a separate medium size bowl, whisk together the flour, baking powder and salt. Add a bit of the flour mix into the cream cheese mixture and mix on low speed until just combined. Continue until flour is all mixed in. Careful not to over mix.
  • Roll about 1-2 Tablespoons of dough into balls and place on the prepared baking sheet. Place balls about 2 inches apart. Bake for 12-16 minutes or until the tops of the cookies just start to get golden brown.
  • Let the cookies set on the baking sheet for a couple minutes and then transfer to a cooling rack. Sprinkle the cookies with powdered sugar then enjoy!

How to Make Cream Cheese Snowball Cookies

These Cream Cheese Cookies are easy to make and come together pretty quickly which is great when you are craving a soft and sweet cookie.

Step One: Preheat the oven to 350 degrees and line a cookie sheet with parchment paper or nonstick spray. In a large bowl or a bowl of a stand mixer, beat the Hiland Cream Cheese and Butter together on medium high speed until creamed, about 2 minutes. Then add the sugar and mix again for another 2-3 minutes until it is light and fluffy.

Step Two: Scrape down the sides of the bowl then add the eggs plus the vanilla extract. Mix again on medium speed until the ingredients are combined.

Step Three: In a separate smaller bowl, whisk together the flour, baking powder and salt. Add a bit of the flour mixture to the butter mixture and mix on low speed just until the flour is combined in. Continue until all the flour is mixed in.

Step Four: Scoop up a Tablespoon or two of the dough and roll into a ball and place on the prepared cookie sheet. Continue with the remaining dough. You will need to do two rounds of baking for these because it makes about 24 Snowball cookies.

Step Five: Bake the Cream Cheese Cookies for 8-11 minutes or until the tops just start to look golden brown. Remove from the oven and let cool on the baking sheet for a few minutes. Sprinkle the cookies with the powdered sugar and then let cool completely. Enjoy!

Room temperature ingredients

Make sure the Hiland Butter and Cream Cheese plus the egg are room temperature before beginning. This helps the ingredients come together easier as well as avoiding overmixing.

Chill the dough if it is too sticky to handle

This dough is fairly sticky once mixed, but if you are finding it way too sticky to roll into balls then just stick the bowl in the fridge for 20 minutes or so. This will make it a bit easier to roll.

Try two coatings of powdered sugar

One coating of powdered sugar is great, but add another dusting of powdered sugar before serving to freshen up the look of the cookie. No one will complain about too much snow in a snowball cookie.

Try out a chocolate version
