I have been working on a Breakfast Casserole recipe for a bit now. I wanted it to have hash browns and meat but also be filled with eggs but not runny, not too cooked and definitely lots of cheese. Enter Hiland Dairy Cottage Cheese to make a delicious breakfast casserole. More specifically, whipped Cottage Cheese. A creamy egg mixture mixed with hash browns, bacon and cheese. Absolutely delicious!

One of the best things about this Breakfast Casserole recipe is just how easy it is to make. Simple ingredients, nothing fancy.
Hiland Dairy Cottage Cheese: Protein packed, creamy and super versatile. Cottage Cheese is the key ingredient for this delicious breakfast.
Bacon: Diced bacon, cooked up crispy. Great flavor for this dish. You can add any other meat too, like sausage too.

Hash Browns: Frozen or fresh (thawed if you use frozen). I loved the addition of shredded potatoes, it acts as a great binder for the egg and whipped cottage cheese.

Can you make this Breakfast Casserole ahead of time? Yes! And it’s very easy to do.
All you need to do is make everything as normal, without the cheese on top, and then cover and store in the fridge for up to 2 days before baking.
Day of Making: Remove from the fridge and preheat the oven to 350 and bake for about 40 minutes. Remove from the oven and add the shredded cheese to the top and back in the oven for another 5 minutes.
This Cottage Cheese Breakfast recipe is incredibly versatile. You can change it up or add your favorite breakfast ingredients to make it yours. Here are some delicious suggestions to the Cottage Cheese Breakfast Casserole.
Meats: Switch the bacon to sausage crumbles, chorizo, ham or turkey sausage. Any breakfast protein will work great in this casserole. You can also leave the meat out as well.
Veggies: The veggie possibilities are endless with this casserole! Make it a veggie breakfast and add green peppers, mushrooms, asparagus, broccoli, anything you like. Saute the veggies with the onions at the beginning before adding them to the egg and hash brown mixture.
Herbs: Add some different flavors to this breakfast casserole with herbs. Add some basil or thyme or some cumin and oregano. Kick up the spice with some chili pepper flakes.
