Bacon Ranch Chicken Salad

Ingredients

  • 4 cups chicken breast cooked and chopped
  • 4-5 slices thick-cut bacon cooked and crumbled
  • 1 cup diced celery
  • 4 thinly sliced green onions
  • 1/3 cup Hiland Dairy Sour Cream
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons dried chives
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon kosher salt

Instructions

  • In a large bowl, whisk together the sour cream, mayonnaise, lemon juice, chives, dill, parsley, garlic powder, onion powder, and salt.
  • Add the chicken, bacon, celery, and green onions to the bowl. Stir until everything is evenly coated in the dressing. Taste and add more salt if needed.
  • Cover and refrigerate for at least 30 minutes (or 1-2 hours if you have time) before serving. This gives the dried herbs time to soften and the flavors time to come together.

Chicken: Rotisserie chicken, or poached or baked chicken breasts, are all great options. Thighs also work well if you prefer dark meat. Just make sure everything’s chopped to a similar size before mixing in.

Bacon: The bacon adds a salty, smoky crunch to every bite. Cook it until it’s good and crispy so it holds up once it’s mixed in with everything else.

Hiland Dairy Sour Cream: Using Hiland Dairy Sour Cream in addition to the mayo makes this chicken salad both tangier than you’d expect and also lighter, while still filling you up. Once you’ve tried it, you’ll never go back.
