Cottage Cheese Pancakes

Ingredients

  • 2 tablespoons Hiland Butter
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1-2 tablespoons Sugar
  • 4 Eggs
  • 16 ounces Hiland Cottage Cheese

Directions

  • Melt Hiland Butter in frying pan.
  • In a mixing bowl, mix together dry ingredients - flour, baking powder, baking soda and sugar.
  • In a separate bowl, mix eggs and add Hiland Cottage Cheese until smooth.
  • Combine egg and flour mixtures. Mix in melted butter.
  • Drop batter by spoonfuls into hot frying pan.
  • Flip when top of pancake bubbles.
