Slice the cucumber in half lengthwise and scoop out the seeds. Grate the cucumber using the large holes of a box grater. Place the grated cucumber in a clean dish towel and wring out any excess liquid.
In a food processor, combine the cottage cheese, olive oil, lemon juice, and garlic. Pulse until mostly smooth.
Transfer the cottage cheese mixture to a bowl and fold in the grated cucumber, fresh dill, and mint. Season with kosher salt to taste.
