Caramelize the onions. In a large skillet, melt the butter over medium heat. Add the sliced onions and a pinch of kosher salt. Cook, stirring occasionally, until the onions become soft and develop a deep golden-brown color, about 30-40 minutes. Adjust the heat as needed to avoid burning. Allow the onions to cool slightly.
In a food processor, blend the cottage cheese, sour cream, garlic and onion powders, and Worcestershire sauce until mostly smooth. Add the caramelized onions and pulse a few times, just enough to break them into small, evenly distributed pieces.
Fold in the chopped chives and season with salt to taste.
Serve with your choice of dippers, such as fresh vegetable sticks, crackers or chips.
