April Fool's Taco Bundt Cake

Materials

  • 3 cups flour
  • 2 tablespoons baking powder
  • ¾ teaspoon salt
  • ½ cup cold Hiland Dairy Butter cut up into chunks
  • ½ cup Hiland Dairy Shredded Mexican Blend Cheese
  • ¾ cups Hiland Dairy Buttermilk
  • 2 eggs
  • 1 pound lean hamburger
  • 1 medium onion chopped
  • 1-2 teaspoons minced garlic
  • 1 packet taco seasoning
  • ½ cup water
  • 1 package Hiland Dairy Monterey Jack Cheese
  • ½ cup Hiland Dairy Shredded Mexican Blend Cheese
  • Refried beans

Instructions

  • Mix together flour, baking powder, and salt. Blend in butter until crumbs are about the size of peas.
  • Pour flour mixture into a blender. Add eggs, milk, and cheddar cheese and stir until blended. Set aside.
  • Brown hamburger over medium heat until cooked through. Add onion and garlic and cook until onions become translucent. Add the taco seasoning and water and mix until completely combined.
  • Spray a bundt cake pan with cooking spray, then put half of the dough in the bottom of the pan. Make a trough in the dough with your fingers by pushing the dough up the sides of the pan.
  • Add a thin layer of refried beans inside the trough and away from the sides.
  • Spread the meat mixture directly on top of the beans.
  • Sprinkle the cheese on top of the meat and beans making sure to keep all the layers away from the sides.
  • Roll out the remaining dough in the shape of the bundt pan. Carefully scrape it up and cover the top. Be sure to push down the sides to completely enclose the bean, beef, and cheese layers. This will prevent the center from seeping out during baking.
  • Bake for 20 minutes. Take the pan out of the oven and use a knife to cut the “cake” from the sides of the pan. Flip it out onto a cooking sheet.
  • Cut thin slices of the Hiland Dairy Monterey Jack Cheese.
  • Hint: I cut the block in half and use a cheese slicer to create thin slices.
  • Cover the cake with the slices of cheese and then put the cake under the broiler on low until the “frosting” looks drippy.
  • Diva’s Tip: Be sure to monitor the broiler because you don’t want the cheese to bubble or turn brown.
