Ingredients

  • 1 tbsp olive oil
  • 1 cup Hiland Dairy Cottage Cheese
  • 1 package fresh baby spinach
  • 1 cup artichoke hearts
  • 1 1/2 cups mozzarella cheese – shredded
  • Seasoning mix – garlic powder, onion powder, salt and pepper (to taste)
  • Crushed red pepper flakes (optional)
  • Parmesan cheese (optional, for topping)

Directions

  • Add olive oil to a hot skillet.
  • Add spinach to the skillet and allow it to wilt all the way down.
  • Then add artichoke arts and season with seasoning mix while cooking.
  • Add cottage cheese and mozzarella. Heat until bubbly. Five minutes.
  • Top with parmesan.
