French Onion Dip Chicken Stroganoff

Ingredients

  • 3 cups diced rotisserie chicken breast
  • 3 tablespoons Hiland Dairy Butter, salted
  • 1⁄2 medium white onion, thinly sliced
  • 12 oz Crimini mushrooms, sliced
  • 1 tablespoon flour
  • 2 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1⁄2 teaspoon black pepper
  • 2 tablespoon fresh chives, finely chopped (divided, saving 2 t for garnish)
  • 2 cups chicken broth, warmed
  • 16 oz Hiland French Onion Dip (reserving 2-3 T for garnish)
  • 12 oz wide egg noodles, cooked 1 minute less than package instructions

Directions

  • In a large skillet, heat butter and onions over medium flame. Stir occasionally for 2-3 minutes or until the onions become translucent. Add sliced mushrooms and cook 2 additional minutes.
  • Next, add flour, paprika, salt and pepper – stirring to coat the vegetables.
  • To the skillet, add chicken and chicken broth, bringing the liquid to a boil. Stir regularly for 5-10 minutes as the sauce thickens.
  • Turn off the heat and fold in the Hiland French Onion Dip whisking to combine (it will start off looking a little lumpy but will turn silky smooth in minutes.) Turn the heat to low, add in the cooked noodles and bring to a low simmer for 5 minutes.* To serve, spoon the Chicken Stroganoff into individual bowl and top with a spoonful of Hiland French Onion Dip and a sprinkle of chives.

*Do not allow to reach a hard boil or you’ll risk breaking the sauce.
