Hearty Beef Soup

Ingredients

  • 1/4 cup (1/2 stick) Hiland Butter
  • 1 cup Water
  • 2 cups Shredded Potatoes
  • 2 tablespoons Onion, chopped
  • 1 tablespoon Flour
  • 4 cups Hiland 2% Milk
  • 1 package (3 1/2 oz.) Smoked Sliced Beef
  • 1 cup (8 3/4 oz. can) Whole Kernel Corn
  • 1/4 teaspoon Celery Seed (optional)
  • 1 cup Hiland Sour Cream
  • Salt and pepper
  • Chopped Parsley (optional)

Directions

  • In saucepan melt butter. Add water, potatoes and onion. Cover, bring to a boil.
  • Turn to simmer and cook until potatoes are done, about 20 minutes.
  • Stir in flour and cook 1 minute.
  • Gradually add Hiland Milk, stirring constantly.
  • Stir in beef which has been cut into small pieces, undrained corn and celery seed.
  • Gently blend in Hiland sour cream.
  • Heat to serving temperature. Add salt and pepper to taste.
  • Serve garnished with a dollop of sour cream and parsley, if desired.
