Ingredients
1 pound marshmallows or large jar of marshmallow cream
1 cup Hiland Half and Half
1 pound finely crushed graham crackers
1 pound coconut
1 pound white raisins
1 pound chopped pecans (Save about a dozen halves to place in bottom of pan for garnish, optional.)
Preparation
Microwave the marshmallows in cream for 60 seconds or warm cream in the microwave for 20 to 30 seconds and mix in marshmallow cream until well blended. Coat a large bowl with cooking spray or vegetable oil and add the crackers, coconut, raisins and pecans. Pour the marshmallow mixture on top and mix well. Arrange the pecan halves you saved in the bottom of an angel food cake pan that has been well oiled or sprayed. Press the mixture into the cake pan, cover with plastic wrap and chill. Slice and serve. I know … I know. When you say fruit cake, most people say "Yikes!" but give it a try; it is so yummy. It keeps well in the fridge in a sealed container or wrapped in plastic.
