Easy Peach and Berry Cobbler

Preheat oven to 350 degrees.

Melt the butter in an 8 inch cast iron skillet (a larger skillet does not work as well).

Toss together 1/4 cup of sugar with the fruit.

Add the fruit to the bottom of the cast iron skillet.

Mix together the milk, flour, vanilla and 1 cup of sugar.

Pour over melted butter and fruit.

Do not stir.

Sprinkle the last 1/4 cup of sugar on top of everything.

Bake at 350 degrees for 40 to 45 minutes, or until slightly brown.


  • 1 stick Hiland Dairy Butter
  • 1 cup sugar
  • 1 cup self-rising flour
  • 1 cup Hiland Dairy Milk
  • 2 teaspoons vanilla
  • 3 cups frozen fruit (peaches and berries)
  • 1/2 cup sugar, divided (1/4 cup of sugar to toss with fruit & 1/4 cup of sugar on top of the cobbler)
