Ingredients

  • 1/2 cup Hiland Dairy Lowfat Cottage Cheese
  • 1/2 cup oatmeal or steel cut oats
  • 3 eggs
  • 1-2 tablespoons oil (for cooking the pancakes)

Directions

  • Mix cottage cheese, oatmeal, and eggs in blender until smooth.
  • Heat griddle over medium heat and add oil.
  • Pour or scoop approximately 1/4 cup batter per pancake onto the griddle.
  • Cook 2-4 minutes per side or until fully cooked and slightly browned on both sides.
  • Serve with your choice of toppings.
